Amazingly Good For You Oatmeal Cookie

Raw Cookie Dough









Ingredients

3  ripe bananas
4 Medjool dates {pitted and chopped}
1 teaspoon vanilla extract
1/4 cup coconut oil
2 cups rolled oats
2/3 cup of raw almond meal
1/3 cup unsweetened shredded coconut
1 teaspoon cinnamon
1/4 teaspoon of sea salt
1 teaspoon of aluminum free baking powder
1/4 cup dark bakers chocolate {chopped not melted}
1/4 cup sundried cranberries

Preheat oven to 350 degrees

Start with the raw the almond meal. If you’ve never had it before – it is simply just almonds crushed in the food processor until it is a powder form. Set aside. Then in a large bowl combine the bananas, dates, vanilla extract, and coconut oil.  In the other bowl bring together the oats, almond meal, shredded coconut, cinnamon, salt, and baking powder. Add the dry ingredients to the wet ingredients and stir until combined. Fold in the chocolate chunks. The dough is a bit looser than a standard cookie dough, but that’s ok. Drop dollops of the dough, each about 2 teaspoons in size, an inch apart onto a parchment lined baking sheet. Bake for 12 - 14 minutes. 





*Makes about 2 dozen bite-sized cookies.
