Middle Eastern Trio~ Mahammara, Olive Tapanade, Baba Ganouj
Mahummara
1 cup walnuts
3 roasted red peppers-peeled
2 tbs pomagranate syrup
2 cloves roasted garlic
2 tbs ground sesame seeds
1 tsp paprika
1 tsp marash chile /or 1.5 tsp chili flakes
1 tsp ground cumin
1 lemon zested and juiced/ or 2 tbs lemon juice
2 tbs olive oil
pinch of sea salt +pepper
~ recipe makes about 2 cups
Sundried Tomato Olive Tapanade
1/4 cup walnuts or almonds
1/4 cup kalamata olives
1/4 cup of soaked sun dried tomatoes
2 cloves roasted garlic
t tsp ground flax seeds
2 tsp olive oil
~ recipe makes about 1 cup
babaganouj
1 roasted eggplant
2 tbs of tahini paste ( sesame seed paste)
2 cloves roasted garlic
1 lemon zested and juiced/ or 2 tbs lemon juice
2 tbs olive oil
pinch of sea salt and black pepper
~ recipe makes about 1 cup
*All dips will be easily mixed in a food processor
* Will keep well in the refrigerator up to a week.
Enjoy with crackers, Naan or veggies !
